Noelia Ricci “Bro” Bianco Forli Trebbiano Emilia-Romagna, Italy An estate full of history, whose origin is lost in a tale of knights, intrigue and countless battles and wars. The estate itself covers 140 hectares, of which 40 are planted mainly for Sangiovese as well as Trebbiano, Chardonnay and a few additional experimental varieties. The Noelia Ricci “Bro” is one of three wines in the Noellia Ricci Pandolfa label, all of which include an image of an animal or insect. This Trebbiano is birthed on slopes overlooking the Adriatic Sea-piercing minerality and fresh citrus tones dominate the palate with a nice gentle roundness at the finish. The sloping gradient, the pressing of the bottles, and using the weight of grapes so skip using pumps makes top quality wine with zero defects. This is a must visit winery if one ever finds themselves in Greece, it combines stunning natural beauty along with access to cultural treasures and historical landmarks. Medium body with chewy palate and incredibly savory. Nice tannins fill the mouth.Grilled Short Ribs with Pickled Daikonhttps://www.youtube.com/watch?v=FSUx5u_5q6Y |

Rustler James Berry Vineyard 2016 Roussanne Paso Robles, California This seamless beauty offers profound aromatics of Honeydew melon, gardenia and brioche. Delving deeper, undertones of crushed rocks, tahini and flint come through. The palate is densely packed with flavors of apricot, muddled oranges and honey and make way for a penetrating finish making you pine for another taste. Kinero Cellars came about through the winemaker, Anthony Yount, and his appreciation for white wine and his dads disdain for it. He set out to create white wines that would satisfy his father’s palate and surprise him by how fun and complex white wine can truly be. Ina’s Perfect Roast Chicken https://www.youtube.com/watch?v=Ys7dyV97FXw Enkidu Bedrock Vineyard 2014 Zinfandel Sonoma Valley, California Ten years of creating spectacular wines, this one in particular is no different. Bedrock Vineyard has been the most consistent in producing wines of unique character. This Zinfandel is warm, creamy and seductive with flavors of black cherry liqueur and raspberries covered in chocolate. The tannins are firm, long and drying on the finish. The mercury is dropping, the leaves are changing color, the air is getting more crisp and we couldn’t be more excited. We’ve teamed up with Cultured Slice (229 PCH Way, Hermosa Beach) to give you some top quality goodies to eat with your wine. You have your Rahmtaler Swiss cheese, a great neutral cheese that will be sure to please, some OLLIE Molisana salami with robust flavors and some truly unique Losada-Cornicabra Olives that will pop with flavors!

| Rahmtaler Emmentaler’s whole-milk brother the Swiss giant we all and love, is traditionally made with skimmed milk, but during the 16th century butter production was suspended in the Emmental region due to surplus-meaning milk wasn’t being skimmed for its cream. Using the whole, unskimmed milk, cheesemakers discovered a creamier, richer, milder verion called Rahmtaler that stakes its own claim in the Swiss cheese cannon.
OLLIE-Molisana Molisana is a robust salame flavored with whole black peppercorn and garlic. It has memorable, classic salami taste that embodies all that we love about this cured meat.
Losada-Cornicabra Olives The Cornicabra variety is usually used in olive oil production but in the typical regions of cultivation it is also very popular as a table olive. This olive is half way through the maturation process producing a beautiful color range from pale pink to dark purple. The cornicabra is oval-shaped with a small horn on one side, which gives the name to this variety: Corni-cabra meaning “the goat’s horn”
