I hope you've had a great week. I'm doing well, but have had a sick baby, which is never fun...although I can't say I don't enjoy the extra cuddles. He's on the mend and I'm looking forward to getting back into our normal routine. 

New recipe post this week:

The Best Chicory Salad (aka my "Dinner Party Salad") - inspired by the book I mention below and the powerful nutrients found in radicchio and chicory greens! 
People seemed to really enjoy my Vegetarian Italian Chopped Salad recipe, so I wanted to share another favorite that I made for a dinner party last week. After learning about the health benefits of chicory greens, I created this salad, which combines slightly bitter chicories with creamy avocado, juicy orange, and delicious hearts of palm (yes, they're also nutritious...and I just love 'em).

A book I love:
In 2013 I listened to an NPR interview with Jo Robinson, and promptly read her book, Eating on the Wild Side, which is one of my favorites to this day. It discusses how our food's been engineered for the modern world (and starching, sweet-loving palates) -- and the unfortunate consequence of nutrient depletion in the process. 

Eating on the Wild side covers some of the most nutrient dense foods, great hacks for maximizing antioxidants and vitamins, and tips for selecting produce. For example, Rosso di Treviso radicchio (featured in the Chicory Salad recipe) was one of the three superstar salad “greens” she recommends. It's got 4X more antioxidants than romaine and this varietal has 3X more bio nutrients than the other common varietal, Rosso di Chioggia. 

If you're interested in learning more about nutrition, plant-based eating, or are a lover of "superfoods" like me, I highly recommend the book or listening to the interview.
