Happy Sunday! If you celebrate Christmas or Hanukkah, I hope you had a wonderful holiday, and if not, I hope you had a nice break this week!
Gearing up for 2020: It's hard to believe we're about to close out a year and a decade. Over the next few days, I'll be writing out my intentions and goals for the year and beyond. I have tons of ideas, but as my life's gotten more complicated, I've learned that clear priorities make all the difference.
My husband and I are also going to map out some ideas and long-term dreams for our family. We've never done this before--and it'll definitely feel a little silly--but I think it'll be fun and helpful to be aligned on the specifics.
I really believe in the power of articulating and writing out what you want. In fact, I recently looked back at a "Goals" exercise I did in 2010, and it's incredible how much my life now mirrors the doodle I created from a little apartment I shared with my sister in NYC. Miserable at work and a little lost, it seriously feels like a lifetime ago. And no joke, 2011 was the start of a massive pivot and so many positive changes.
So on that note, I encourage you to put some thought into this and write out your intentions and goals for the year (writing them doubles your chances of success). If getting healthier, cooking more, or being more sustainable is part of your vision for 2020, please let me me know how I can support you. You can also send your favorite tips for other Kaleifornians that I can pass along. I'd love to hear from you (just hit 'reply' to this email), and I'll do my best to create content with ideas, time savers, and hacks that can help. Serving this community is very high on my 2020 list!
New on the blog: I've continued to tinker with my site and I'm updating my recipe posts with a new template that includes star ratings. | Cauliflower Fried Rice Lettuce Cups is a one-pan meal that you can pull together in 30 mins or less. I save time by using store-bought frozen cauliflower rice and scrambling eggs in the same pan as everything else. I usually use ground turkey, but it works just as well with ground chicken or pork. You can skip the meat all together if you're looking for a satisfying and quick vegetarian meal.
I know dark leafy greens seem to get all the attention, but consider this a plug for the amazing health benefits of cauliflower ("the new nutrition superstar") and cruciferous vegetables. Not only are you skipping a high carb starch with this recipe, but you're replacing it with something that's really beneficial. Boom. |
