Hi Friend, Happy Sunday and happy March!
Here's a new recipe I think you'll love and some healthy living tips from this week: New recipe post: Cauliflower Soup with Crumbled Bacon - it's dairy-free and absolutely delicious. If you use sugar-free bacon, it's Whole30, Keto and Paleo compliant. I also love that blended soups like this are pretty forgiving (sloppy chopping is A-OK) and an easy way to clean out the refrigerator. I've included stove-top and Instant Pot instructions and simple modifications to make this vegetarian. Hope you love it!
If you like this or any of my other recipes, would you you please do me a big favor and share with a friend or leave a star rating on my website? You can find that option at the bottom of the recipe page near the Comments section.Thank you! |
| | This week's recap of healthy tips:
Reduce plastic consumption: get it out of your coffee
- Avoid plastic pods and use a plastic-free coffee maker. There are lots of healthy options; I use an inexpensive stainless steel Percolator (listed under Appliances on my Favorites* page).
- Drink from ceramic, glass or stainless steel mugs. To-go cups are lined in plastic and topped with lids that are often made with BPA, which also leaches into the drink.
- Remember: heat, acid, & fat. These all increase the amount of plastic that can leach hormone-disrupting chemicals into food / drinks.
Superfood spotlight: artichokes - They're one of the healthiest foods you can find in the grocery store. They "contain the highest levels of antioxidants of any vegetable...and are loaded with an army of beneficial nutrients that can protect the body from cancer" among other health benefits.
- Artichokes lose nutrients more rapidly than other vegetables, so try to buy fresh and eat them within a day or two.
- Look for firm artichokes that squeak if rubbed together. Softness is a sign that they’re not fresh. Don't worry if there's some frost damage (brown streaks) on the outer petals.
- My go-to recipes: steamed Artichokes with "good on everything" aioli (Instant Pot and stove-top instructions) or with braised chicken thighs. You will not be disappointed!
Blue Zone trend - Four of the original Blue Zones (parts of the world with greatest longevity and low rates of chronic diseases) all drink alcohol regularly. Two important caveats: they do it in moderation (1-2 glasses) and it's usually with friends and/or food. Traditionally made (natural) wine* automatically helps with moderation given that it's lower in alcohol and toxins - a few percentage points are more noticeable than you'd think!
