Old Caz's Catastrophe - Rye IPA

This release is a collaboration with Old Caz Beer of Rohnert Park, CA.  Tom Edwards, brewmaster and co-owner at Old Caz Brewing Company in Rohnert Park, California, has gone through the full evolution from homebrewer, to pro-brewer, to brewery owner right here in Sonoma County. He is a friend of the shop and a genuinely enthusiastic and excellent brewer. We are lucky to be working with Tom to bring you one of our favorite Old Caz beers as an ingredient kit so that you can make your own delicious Catastrophe!

Beer Style:  Rye IPA, a specialty off-shoot of American IPA, adds a bit of extra intrigue to the malt profile of this otherwise hop dominated beer. This Old Caz recipe goes BIG on aromatic hops.


Dominant Ingredients and Characteristics: Rye malt adds a unique spice-like element while no less than 7 oz of aromatic hops - Citra, Simcoe, Cascade, Amarillo - make a wonderful catastrophe.

Cotati Polka - Oktoberfest Lager

Beer Style: This historic Bavarian beer party lager style is known for its smooth and clean drinkability with a focus on German malt richness without excess sweetness. Pairs well with accordions.


Dominant Ingredients and Characteristics:  Notes of toast, honey and pronounced malty sweetness come from German Munich & Pilsener Malts, while Bavarian Lager yeast enhances the malt.

Seawolf - Belgian Dubbel

Beer Style: A copper colored ale originating in Middle Age monastaries, Belgian Dubbel is moderately strong in both alcohol and flavor intensity with hints of cloves, chocolate, dried fruit & cookies.


Dominant Ingredients and Characteristics: Dark Candi Syrup and CaraVienne & Special B Malts add layers of carmel, fruit, chocolate & toffee while Trappist yeast brings more fruit & spice.

1217 West Coast IPA - Private Collection 

This strain is ideally suited to the production of West Coast-style American craft beers, especially pale, IPA, red, and specialties. Thorough attenuation, temperature tolerance, and good flocculation make this an easy strain to work with. Flavor is balanced neutral with mild ester formation at warmer temperatures, allowing hops, character malts, and flavorings to show through. PRE-ORDER REQUIRED.


2575 Kolsch II - Private Collection

This authentic Kӧlsch strain from one of Germany’s leading brewing schools has a rich flavor profile which accentuates a soft malt finish. It has Low or no detectable diacetyl production and will also ferment well at colder temperatures for fast lager type beers. PRE-ORDER REQUIRED.
