We have been building up to this launch since before last harvest 2022. As you might expect, the balsamic vinegar production process is very slow and requires patience. The process of developing our support for your home production has taken patience as well. Quite soon the basic elements of our balsamic vinegar department at The Beverage People will be in place---the yeasts, vinegar cultures, barrels, and instructions. The newest element with the most limited availability is our specially produced balsamic vinegar mother. We will have a few gallons ready for purchase in about 6-8 weeks. We are making it available for pre-order now. If you are eager to begin the balsamic process this season, we highly recommend you pre-order now to secure the mother culture you will need.
