| | “I again met with the young Clément Boillot, who is the son of Ghislaine Barthod and Louis Boillot. Clément is slowly taking over both Domaines, and while his parents remain very much involved, it's clear he is the future. Though Ghislaine did drop in to say hello and helpfully added a few details, the tasting was conducted by the younger Boillot, who noted that 2020 ‘started and ended very early as it was hot and very dry almost without exception from April to August. Thankfully we have a lot of very old vines with well developed root systems such that we didn't have too many vines shutting down due to water stress. With that said, the younger vines did suffer and some even lost their leaves prematurely and particularly those where soil depth is limited. As such, establishing the ideal start of the harvest was a bit of a compromise, as you definitely don't want to start too early, but almost worse is picking too late. Trying to figure out this date when pickers have to be notified well in advance was problematic. In the end, we chose to begin on the 18th of August and picked as quickly as we could. Yields weren't great, though they weren't terrible either at around 27 hl/ha with potential alcohols that ranged from 13 to 14%. Even so, yields were variable because in Fuées, for example, they were only 12 hl/ha. We chose to vinify extremely softly as we only did one punch down followed by pump-overs, as the skins were so thick it would have been very easy to over-extract. I really like the style of the 2020s as they have better acidities than the 2019s with slightly better densities’ …. Boillot simply added that ‘our vineyard of Pruliers did suffer some hail damage on the 1st of August that cost us some yield but otherwise, 2020 gave us excellent raw materials to vinify.’” Allen Meadows, Burghound.com |
