"A somewhat experimental wine meant to play with the line between oxidative and reductive and to use different techniques to explore terroir. The fruit is pressed whole cluster using a traditional Champagne cycle. However only the couer de cuvée is used.
It is then disgorged and bottled without dosage of any kind. This oxidative style is meant to bring out the minerality of the site. The nose is heavy with marzipan and berry fruit with aromas of pastry and a hint of miso. Extremely complex with pistachio gelato and floral notes also making an appearance."
