| "Viñas Serranas is a new, small, personal project from César Ruiz - from La Tintorería wine shop in Madrid and other projects - in Mandrágora in the Sierra de Salamanca with a couple of partners who have the vineyards (all organically farmed) and look after the wines day to day. 2017 is the first vintage, and ... many small plots are vinified separately and were bottled in July 2018. These wines show the diversity and potential of the Sierra de Salamanca ....
For now, they are in a very cold cellar where they are going to keep the wines for two summers in used oak. So these 2019s are a little more polished; it's a warm vintage when they harvested at the end of August, and they had some rain that refreshed the grapes. Still, all the wines had a little more alcohol than in 2018, and the wines are more fruit-driven but with more polished tannins. They expect to move to a new winery for the 2021 harvest. They have reached their desired volume of only around 20,000 bottles. They are in the process of certifying their vineyards as organic. Their current winery is outside the limits of the Salamanca appellation, so all the wines are sold under the Vino de la Tierra de Castilla y León appellation." Luis Gutiérrez, Wine Advocate

| | | "The 2019 El Canchorral is a blend of Calabrés (Grenache), Aragonés (Tempranillo), Verdejo Negro, Rufete Blanco, Palomino, Moscatel [Muscat of Alexandria], and other grapes planted 85 years ago on degraded pink granite soils. This is the only wine that ferments with 100% full clusters. It has a lot of white grapes and is more floral, with less alcohol (it's 13.5% even in this riper year), more acidity, and a lower pH. It is more floral à la Fleury and very expressive, as they can use very low doses of sulfur in this wine given its higher natural acidity (possibly because of the white grapes). This comes from a very old vineyard, and the varieties feel very integrated and complement each other. It comes through as complex and nuanced, a little riper and showier than the 2018. The palate reflects the effect of the stems in the vinification a little. All of these single-vineyard wines matured in used oak barrels for some 15 months in 2019.
