Wild Beer Co - Evolver IPA 100% fermented with Brettanomyces. For the first 3 months the beer tastes the same as a fresh pale ale, then the differing flavour compounds start to shine through and after 6 months the Brett really takes hold. The Evolver takes on a more complex character over time as the yeast and the hops combine to produce a new and exciting beer that will continue to evolve as the yeast slowly matures the beer.
This is a beer that can be drunk fresh, as a normal pale ale or left to evolve and mature into a unique and unusual beer. 5.8%

Nebula is a showcase of yeast embracing hops. The Vermont Ale Yeast, is responsible for the hazy appearance as it clings to the hop particles left over from extreme dry hopping. The yeast actually contributes a whole host of fruity esters, which can come across as peachy by themselves but in the end they blend seamlessly into the tropical hop profile we have selected. 5%

A clean and crisp base was achieved by using a lager yeast with the lime building an addictive tang to the pallet and a gose inspired flurry of salt adding to the finish. What is it? A lager, a gose, a sour... Who cares. 4.5%

Nomad/Wild Beer Big Red This beer rest in Australian Shiraz barrels from Mudgee for over a year.
Halfway through the barrel aging we cultured and propagated Somerset grape wild yeast from bottles of Squashed Grape, one of Andrew’s creations - a beer that brings wine and beer together. This beer goes even deeper, two brewers from opposite hemispheres create a beer homaging wine, using wild yeast from grape skins from far far away and aging it in wine barrels we personally sourced and picked up from Mudgee. 7%

It is nice to have an American influence on Russia rather than vice versa. This beer is big, rich, roasty, and hoppy.
