A new year is beginning and I have good news: it is Bianchetto truffle time!
This truffle is available from January 15th to April 30th.
This variety is called Bianchetto precisely because it wants to recall its white truffle "cousin".
It resembles it in appearance, but it is much more widespread and popular: it is in fact used in many recipes also because it is characterized by a very intense aroma and a lower price than the prized white truffle.
