The ingredients of the Piadina Romagnola, the Italian flatbread, are few and simple, typical of a poor cuisine but also healthy and natural, linked to the earth. The azdore, an ancient term that refers to the women who manage the house according to the Romagna dialect, knead them into small round loaves that they roll out with a rolling pin and cook in very hot text, turning them quickly with the tips of your fingers to avoid getting burned. This recipe, with small local variations mostly linked to the size and thickness of the Piadina or to family customs, has been handed down for generations. Over time a pinch of baking soda or a hint of yeast has been added to the dough, but its taste is always original. Like I wrote, nowadays Piadina is largely used all over the country. In fact, it is quick and easy to cook and you can fill it with all your favourite ingredients. There is nothing that doesn’t go well with it. It can be salty, for example with cheese, vegetables and rucola, or sweet, for example with chocolate cream and fruits.
