First of all, I believe that our bresaola is one of the best in the world!
 
It all starts with the beef. Our bresaola comes from only prime cuts of certified beef that undergo a strict quality control process to ensure that everything we give you is up to our standards—which means it's up to your Customers standards, too. 
 
We source our beef from farms in the Lombardy region of Northern Italy, an area known for its lush green landscapes, fresh mountain air, and rich, fertile soil. Our cattle are raised on environmentally friendly farms that fully adhere to Italian standards for sustainability. The end result is an incredibly tender and delicious meat that makes for some seriously amazing bresaola.
 
Our process is just as important as what goes into it. We cure our bresaola using a traditional method that has been used in Italy since the 1400s (though we've made a tweak or two over the years). It takes time—about three months per batch—but we think it's well worth it. 
 
The result? A lean yet flavorful dried salted beef that tastes like no other cured meat in the world.
 
We cut our bresaola into very thin slices because we want every bite to be perfect. When you're eating something this good.

The "Fassona Piemontese" is a native breed in Piedmont and is characterized by its thinness and tenderness. The color is red tending to pink, the taste of this excellent product stands out on the palate, with a homogeneous composure, always tender and unmistakable.
