| | Dear Friend, Today I want to take you on a trip in one of the most beautiful Italian regions: Puglia.
Puglia is a region in the South of Italy which is famous for its beautiful beaches and sun.
It is full of history and tradition, just think of Alberobello, the village made of small cute houses called “trullo” (you can see the picture above).
Puglia is also one of the regions where some of the best Italian products come from, let's discover some of them. |
| | Sun-dried Tomatoes
After the import of tomatoes from America, the journey to discover dried tomatoes begins from the southern coasts.
Here the rural population tried to survive by making the most of what the sea and the land had to offer, and the tomato had the particularity of ripening in the sun.
Once cut, the tomatoes were immersed in the sea and then left to dry in the sun in order to have the flavor that characterizes it. The use of salt, later, replaced sea water up to the current ripening technique. |
| | Focaccia Barese
The focaccia from Bari is a soft and tasty focaccia thanks to the roasted tomatoes that cover it. This is a delicacy that you absolutely must try if you are in Puglia.
Its origins date back to the Phoenicians, and then spread to ancient Greece and the Roman Empire. Apparently this round focaccia was prepared and then offered to the Gods as thanks, or tasted together with good wine during the wedding.
Today, it is one of the most common Italian recipes.

| | Frisella
Frisella is a kind of bread with the shape of a donut.
Its origins are very ancient: the friselle were in fact already present 3000 years ago as travel bread on Phoenician ships.
When it came time to eat them, the sailors soaked them in seawater, shared them with olive oil and then combined them with other poor foods such as onions.
It is in fact a bread for sailors: the hole in the center made it possible to insert many friselle on a rope to be tied as if it was a necklace and then hung it, so as to be able to facilitate its transport on ships.
Today, you can try Frisella together with your favorite ingredients. For example, cream cheese and smoked salmon or Mozzarella Fiordilatte Saporalia with Sundried Tomatoes.
