Green Chile Recipe of the Week : Chipotle Crab Dip

Chipotle Crab Dip is one of those never-fail recipes that everyone loves. It's an ideal, elegant complement to any Academy Awards party. It's also good with either hot or mild chiles - I tried it with both using Select New Mexico chiles. I love stuff like this that I can whip up in no time and know it will get snarfed up!
If you don't have a crockpot, you can easily heat it in a microwave on medium-low power or in a double boiler. Just be sure to keep it below a boiling temperature.
You can make it with any chipotle salsa – I used my favorite, 505 Honey Chipotle Salsa. This is a new product and may not be in your grocery store; if so, Safeway also makes a very good chipotle salsa. Other chipotle salsas should also work fairly well. Note: 505 also makes Chipotle Honey Roasted Green Chile, which is not the same (no tomatoes).
I divided the batch in two, making half with Mild Select New Mexico chiles and half with Hot. Both work well, as you really control the heat with the green chiles. Some of my friends would definitely go for the hot. When it comes to parties, I’m a big proponent of taking 2 bowls – one hot and one mild, with labels. That way you can satisfy everyone

Ingredients: - 2/3 cup 505 Chipotle Honey Salsa
(or Safeway Chipotle Salsa, or chipotle salsa of your choice) - 1/3 cup milk
- 3 8-oz packages of cream cheese, cubed
- 16 oz imitation crabmeat, flake style
- 1 cup thinly sliced green onions
- 1/2 cup diced green chiles (either hot or mild will do, depending on desired heat level)
Instructions- Stir milk and salsa together, then pour into a crockpot coated with nonstick cooking spray.
- Stir in cream cheese, crab, onions, and chiles.
- Cover and cook on low for 3 hours, stirring every 30 minutes. Add additional chiles if you wish to adjust heat level.
Note: if using microwave (low power) or double boiler, cook for 5 to 15 minutes, stirring every 3-4 minutes.
- Serve with French bread, crackers, or tortilla chips.
Notes No crockpot? You can simmer this, covered, over a double boiler. Or you can microwave on a low power level, let it sit for a half hour, then microwave again just to heat it up enough to serve. The key is to use low heat with this - you don't want it to scorch or boil, which will cause ingredients to separate rather than blend. Preparation time: 10 minutes Cooking time: 3 hours Serves: 12 |
