Green Chile Recipe of the Week Chile Cheese Potato Bites |

These little appetizers have a great flavor and are easy to make. They are ideal for a game day party. All you need to do is make them up ahead of time, perhaps the day before, then pop them in the oven 10 to 15 minutes before you want to serve them.
They are basically a variation on twice-baked potatoes.

Ingredients: - 12 new potatoes about the size of a ping pong ball
- ¼ tsp Kosher salt
- ⅛ tsp ground cumin
- ⅛ tsp fresh ground black pepper
- ¼ cup grated sharp cheddar cheese
- 2 tbsp grated Parmesan cheese
- 2 tbsp diced green chiles
- optional: additional grated cheddar cheese to melt on top, sour cream for garnish
Note: You may need to adjust the amount of salt, pepper, and cumin as the size of potatoes can vary quite a bit.
Directions:- Preheat oven to 450 degrees. Lightly grease a baking dish or spray with cooking spray.
- Put the potatoes in a small pot, cover with water, cover with a lid, and bring to a boil. Cook over medium heat for about 20 minutes or until soft when pricked with a fork.
- Blend salt, cumin and pepper and set aside.
- Blend cheddar cheese, Parmesan cheese, and chiles and set aside.
- Remove cooked potatoes, slice each potato in half, and use a spoon to scoop out the inside of each potato into a small bowl.
- Mash the potato that you scooped into a bowl, then blend with the spices.
- Blend in the cheese and chile mixture.
- Spoon the potato mixture back into the potato halves, pressing down lightly.
- Place each potato half on the greased baking dish, topping with additional grated cheese if you wish.
- Bake for 10 minutes or until hot and cheese melted.
