Enlightenment Wines small batch meads made with wild yeast, foraged herbs, and locally sourced fruit. These honey based wines are dry (not sweet), barrel fermented and released seasonally.
Fey Apple Mead
Dry but full bodied apple mead spontaneously fermented from NY state cider apples and local honey, and in oak barrels over the course of a full year. Unfiltered natural mead without added sulfites in a very limited edition of only 26 cases. 

‘CAS II’ Sparkling Apple/Cherry Mead
Made in the ancestral method, and bottle conditioned- Cuvee Anguis Singularum II is a sparkling apple - cherry mead produced and bottled in the ancestral method without sulfites or filtration. Fermented and barrel conditioned for over a year. Dry and effervescent, this wine combines the fruity aroma of NY state tart cherry with the charming drinkability off local apples and honey. Limited edition of 30 cases.
 


‘Floralia’ Juniper, Lavender and Marjoram Infused Mead 
Off dry botanical mead with Juniper, Lavender, and Marjoram. Made from handpicked materials from around the Hudson Valley and Long Island - this mead smells incredible and luminous.  Produced in a limited edition of under 100 cases.
