Vegetable Production
Learn
the challenges and rewards of a direct-market vegetable operation in
Central Kentucky with one of the region’s leading farmers.
Butchery Session
The
butchery demo will be led by Michelle Cordaro of Marksbury Farm.
Michelle will demonstrate a step-by-step breakdown of half a hog. The
demo will walk everyone through the breakdown of the primals, initially,
and then go into the different case cuts everyone is familiar with.
Michelle will be seaming out muscle groups and explaining where cuts
come from and how they are traditionally prepared, briefly correlating
the cuts to the counterparts on a steer (e.g. pork chops come from the
same muscle groups as Ribeyes and NY Strips).

| Afternoon Tours*
Processing Facility Tour
Take
a walk through the Marksbury Farm Market processing facility, a
12,000-square-foot multi-species slaughter, processing and packing plant
producing both Marksbury’s branded products and privately labeled
products from dozens of producers throughout the region. See
Marksbury’s commitment to animal welfare, the poultry processing line,
the large animal slaughter floor, the multi-species processing floor,
and the certified kitchen and smokehouse.
Pasture Management Tour
The
Marksbury Farm Market facility is located adjacent to a 1500-acre farm,
most of which is dedicated to sustainable grain production. The areas
closest to the facility are home to grazing species, and this walk along
these paddocks will provide an overview of the Marksbury pasture
management methods used to produce improved soil, better forage, and
top-quality meats.
