Today we celebrate Labor Day here in the US and in Canada…
And it makes sense to celebrate Labor Day by…
Having a great meal...
Today, Pasta salad is on the menu…
It can be the main dish…
It can be another side dish…
So, my contribution for today is a very good pasta salad…
2 cups of uncooked pasta (your choice for the type you prefer) Cook per package instructions, drain and let cool
Add: ½ cup chopped onion
½ cup chopped red or green pepper
½ cup cubed cheddar cheese
½ cup cubed Ham (or chicken or shrimp)
½ cup each sliced olives and pickles
½ cup cherry tomato sliced in half
½ cup cooked peas
¼ cup chopped pimentos
Mix together and add the dressing:
1/2 cup mayonnaise
2 teaspoons white wine or plain vinegar (I did substitute white wine rice vinegar)
1/2 teaspoon kosher salt adjust to taste
1/2 teaspoon freshly ground black pepper
1/2 teaspoon sugar
I found letting the salad sit in the refrigerator for several hours prior to serving lets the dressing really open up the flavor of the ingredients…
