Food Focus: Zucchini & Asparagus Salad
This is a signature side dish one of my besties brings when she comes to visit. It's easy to prepare, healthy and simply delicious!
Ingredients 1 bunch asparagus cut on the diagonal into 1 inch pieces 2 zucchini cut into 1/8" thick noodles using a mandoline (slice vertically for long strips) 3/4 to 1 cup sliced parmesan cheese 1/4 cup shredded parmesan cheese 1/3 cup extra virgin olive oil 1/2 lemon, squeezed salt and pepper to taste (optional)
Toss zucchini, asparagus and slice parmesan together. Drizzle olive oil and fresh lemon over ingredients. Sprinkle with shredded parmesan. Serves 4. Enjoy! |
