Sweet Potato, Apple Bisque (gluten free, dairy free, vegan)
2 Tablespoons coconut or avocado oil 1 small onion chopped 1 teaspoon Himalayan salt
16 oz. low sodium vegetable broth 12 oz. water 2 medium sweet potatoes, peeled and chopped 2 green apples, peeled and chopped 1 teaspoon nutmeg (add more or less to your preference; can also substitute with cinnamon)
In a medium to large sized pan, heat oil on medium. Add onion and salt. Saute until tender, about 3-5 minutes. Add broth and remaining ingredients. Cook until sweet potatoes and apples are soft. Ladle into a high speed blender (like Vitamix) and puree. If you don't have a high speed blender, let mixture cool. Top with a few sprigs of fresh parsley and Enjoy!
