| | | Comfort Food: Mother Hazel's Potato Soup
January is COLD in Ohio. If you're chilly too (or if you're just in the mood for a delicious soup), here's a recipe to warm you up:
Ingredients:
9 medium potatoes, diced 1/2 cup chopped onion 3 stalks celery, diced Enough chicken broth to cover vegetables (roughly two 13 oz cans) 2 chicken bouillon cubes 1/2 tsp salt 1.5 tsp celery salt
White Sauce: 3 cups milk 3 TBL flour 3 TBL margarine
Add the veggies to your cauldron (or pot, I don't judge) and pour in the broth. The broth should be just enough to cover the veggies. Add the bouillon cubes and seasonings. Cook at a simmer for about 45 min, or until you can easily pierce the potatoes with a stiletto blade (or fork). Pour in the white sauce and simmer five more minutes.
Upgrade:
Snag some canned clams. Replace some of the chicken broth with juice from the clams, then drain and add the clams. Instant clam chowder!
Downgrade:
There are those heathens who would add crumbled bacon or a parsley garnish. If you choose to do this, I can't stop you. But, ew. |
