MONDAY’S MENU Okay, so we actually made this on Saturday, but “Monday’s Menu” alliterates well, and we’re writers after all. :-)
BUT… this is a wonderfully simple and easy soup to make for any weekday or weekend. We make a huge pot and eat from it for part of the week.
AND… it uses some of our yard weeds and garden edibles!
Whenever we can’t find watercress in the stores, for salads, sandwiches or soups, we enjoy these watercress substitutes. Listed below in our order of preference:
