Subject: Amaranth and So Much More

GARDEN GREETINGS, FRIEND!!!

So grateful that it continues to be a season of plenty in the fall garden, and hoping your harvest continues as well.

We’re really enjoying growing amaranth (pictured above) for the lovely color it adds to the garden and the food value and nutrition in all parts of the plant.

MAKING MEDICINE for HEALTH & IMMUNITY BOOSTERS:

We’re making homemade decongestant and fire cider for the pantry medicine shelf. Some folks are making elderberry syrup and herbal tinctures. What remedies are you making now?

HOME REMEDIES TO REPLACE OOS

The other day we got an email from one of our natural supplement sources saying that prices were going up due to rising costs everywhere, and that items might be out of stock (OOS) from time to time as well.

We’ve all noticed many things that are no longer available or often out of stock. So it’s all the more wonderful a feeling to be able to go to the garden and pluck some herbs to use for homegrown nutrients and remedies.

This back to nature trend with more people growing their own food and homemade remedies is a very good thing on many levels.

DEHYDRATING CONTINUES:

Our 5-tray dehydrator continues to work around the clock with the ongoing harvesting and drying of herbs and other plant leaves, including lemon and strawberry leaves and avocado leaves for tea and cooking and gynura procumens (longevity spinach) for daily tea water.

TIME TO PLANT TREES:

Fall is the best time to plant most trees. So this week we added two more fuyu persimmon trees to our growing foodscape of edibles. We absolutely love these amazing fruits that are long lasting, abundantly producing and with many uses.

INDOOR GROW LIGHTS NEEDED FOR PLANTS… PLANTS… MORE PLANTS!!!

This is the time of year that most of us have brought back in more plants than we took out in spring, LOL!

So if that’s you and now you’re in need of grow lights, we have a couple articles that might help:

WHITE BUTTERFLY GINGER PLANT:

Speaking of growing plants indoors, we’re hoping that our son, Nikolai’s, rescued Butterfly Ginger plant will have enough light to continue her fall bloom indoors. Right now she’s got relatively good southern exposure light but we’ll be watching her buds closely.

FAVORITE BREAKFAST THIS WEEK:

We love roasted sweet potatoes and eggs. You can also use butternut and other winter squash if you don’t have sweet taters. Our last batch included a mixed blend of fingerling potatoes in purple, gold and red, with a baked avocado egg that we threw in because the avocado needed eating.

OTHER FAVORITE RECIPES FROM THIS WEEK

Leek Potato Soup - super simple and always loved by all, (served with cornbread).

Stuffed Winter Squash - we used our Tetsukabuto but you can use any winter squash.

Pumpkin Squash Ravioli - Surprisingly scrumptious and easy to make with the shortcut of wonton wrappers, which of course will give you many more ideas of things to make.

Speaking of wrappers… that’s a wrap for now, friend. We hope you’re faring well and enjoying the beauty of this season.

As always, we’re only a reply away, so drop us a line on news from your garden.

From our garden and hearts to yours,

Coleman and LeAura Alderson
