| | Franz Hirtzberger is one of the greatest producers in the Wachau for dry white wine.
The
approach at Hirtzberger is the pursuit of optimum ripeness, meticulous
work in the vineyards, and intimate knowledge of each terroir. Each
year they do between 4 and 5 passes for every vineyard, only picking
clusters when they are absolutely perfect. You can compare this harvest
approach to Grand Cru white Burgundies, and at a fraction of the price
of even the most precious Hirtzberger cuvées.
In the cellar,
indigenous yeasts are used & fermentations are done in steel, but
aging is in larger, older foudres. A special feature of Hirtzberger
wines is Franz’s belief in not too long a time on the lees and no
batonage in order to best express the purity and minerality of each
