Neal Rosenthal's fortuitous relationship with the Bea family of Umbria — one of the great domaines of Italy — led them to the Sisters of the Cistercian order living and working at their monastery in the Lazio district. Here at this quiet religious outpost eighty women of this religious order work the vineyards organically. Under the guidance of Bea, they produce wines as honest and sympathetic and gracious as they are.

2018 Monastero Suore Cistercensi Ruscum Lazio Bianco $35 bottle
A blend of Trebbiano, Malvasia, Verdicchio and Grechetto. The juice is left to ferment on the lees for a period of two weeks or more, extracting all of the flavors, colors and textures of its fruit. The result is a wine of often deep golden color and penetrating minerality with hints of herbs, particularly anise, and wild flowers. There are approximately 4000 bottles produced annually of this cuvée.

Paolo Bea’s wines are culled from the unique soil of Montefalco, imparting a minerality that is exclusive to this area. The vineyards are cultivated organically, all grapes are harvested by hand and all wines are bottled without fining or filtration.

2015 Paolo Bea Sagrantino Secco di Montefalco Vigneto Pagliaro $110 bottle
The fabled local grape of Montefalco is the Sagrantino and the Pagliaro vineyard, situated at 1300 feet in altitude, is dedicated in large part to this grape variety. The wines is then aged for one year in stainless steel, another two years in large Slavonian oak barrels and, finally, spends one more year in bottle before release.

2014 Paolo Bea Montefalco Rosso San Valentino $60 bottle
This wine is sourced from the San Valentino vineyard in Montefalco the soil of which is dominated by clay. The vineyard is at 1300 feet altitude. The composition of the Montefalco Rosso is 70% Sangiovese, 15% Sagrantino and 15% Montepulciano, all from a 50-year old vineyard containing the constituent grapes. The wine is aged for 3 years in stainless steel and an additional 4 to 12 months in bottle before release.
