Domaine Jean Dauvissat is run by Jean’s grandson Fabien. Fabien is a young and extremely talented winemaker who, since taking over from his father, has converted the whole Domaine to organic and biodynamic viticulture.
The wines are characterised by a long maturation of between 18 and 24 months in tank before bottling. Fabien uses a combination of stainless steel, oak and cement. His wines are instantly appealing due to this long elevage and full of texture, intense fruit and underlying minerality that makes them fresh, vibrant and wonderful from release.
