Cuvée Méribets is 100% Syrah from three lieux-dits
in Serrières: Les Rouasses, Le Grand Moure, and Charamelin. These
parcels consists of clay and granite sands over a base of granite.
Harvest is conducted entirely by hand using small bins. All fruit is
destemmed and a traditional vertical press is used. Fermentation with
indigenous yeasts takes place in open vats. Remontage twice a day for
three weeks. Aged in entirely neutral, older barriques for 11 months.
