Ernest Remy Rosé de Saignee Grand Cru Champagne $75 bottle Only the oldest pinot noir vineyards of the family domaine compose the blend of the Rosé de Saignee. With an excellent quality, the grapes gathered during the harvest are picked off without pressing before the low temperature delicate pellicular maceration. In a second time, the saignee allows the flow of juices called goutte. These juices are vilified without the malolactic fermentation in order to preserve the freshness of their red fruits and flowery flavors.
