Spontaneously fermented; the Cabernet was fermented whole berry without stems, while the Syrah was fermented whole cluster. Once fermentation was complete, both wines stayed on their skins for an average of 27 days to increase extraction and complexity. This wine is expressive and original, bringing together the structure and dense black currant flavors of Cabernet Sauvignon and the sumptuous dark fruit and spice of whole cluster Syrah.
The 2013 is bold and richly textured with black plum and cherry flavors. Despite this fruit, it remains restrained and focused with notes of smoke, herbs and gravel. A plush, velvety smooth mouthfeel, the flavors of the wine coat your mouth. Perfect with something red from the grill!
