Patrick Piuze cut his teeth at Verget and Brocard until 2008 when he founded his own negociant. He rejects corrections of any kind, which includes chaptalization, enzymes, acidification as well as new wood. He buys only grapes from older vineyards within the original boundaries of Chablis and makes his wine primarily in stainless steel tanks, then ages them in old barrels to preserve the terroir of the specific sites.

“Pale yellow. Elegant if slightly reduced nose offers orange zest, honey, white pepper and exotic flowers. Wonderfully intense and stylish, displaying lovely inner-mouth perfume without any impression of weight. Not at all a muscular style of grand cru. Really reverberates on the very long, subtly gripping finish. Superb wine in the making, my favorite today among these 2013s.”

91-94 Burghound “This is arguably the most elegant wine in the range with its pure aromas of green fruit, acacia blossom, mineral reduction and oyster shell suffused nose. There is good volume and solid concentration to the mineral-inflected, focused and sleekly powerful medium weight flavors that possess a succulent yet balanced and beautifully intense finale. As it often is chez Piuze, this is likely to be the best wine in 2013.”
