Chablis is a village north and a little east of the center of France, not far from Paris. It is a distinctly cool climate in which to grow wine. The soil is also distinctive, known as Kimmeridgian Clay. This is a chalky soil, formed in large part from the calcium deposits of sea creatures from the Jurassic era, when this portion of France was part of an ocean. The same soil formations also appear in Champagne and are what makes the Cliffs of Dover white.

Lilian is the 5th generation of Duplessis working the domaine, having taken over for his father, Gerard, in the early 2000's (Gerard, like all winemaker's fathers, did not disappear from the caves after retirement and still works with Lilian). He started out doing what a lot of young vignerons are doing all over France: rehabilitating vineyards with biodynamic practices while keeping the traditions from previous generations in his approach to winemaking.

Known as the antiquarians of Chablis, the father and son team have gained a reputation for their “immortal”, age-worthy wines and unparalleled store of older vintages. For those who love the intense minerality and glacially slow development of great Chablis, these are wines of reference.

Chablis 'Fourchaume' Premier Cru 2015 $48

The Duplessis' 1.25 acres in the 'Fourchaume' vineyard are from two separate parcels, both on very rocky soils with full southern exposure.This is one of Lilian’s favorite crus. Reserved, deep and edgy, it sings now and should continue evolving for another five years.


Chablis 'Mont de Milieu' Premier Cru 2015 $52

The 2015 Mont de Milieu is only the second release from a recently acquired 50 year-old lot in the Premier Cru. The vines had been harvested by the Duplessis over the last five years, so Lilian is familiar with the parcel and had begun converting to biodynamic treatments in 2009.
The wine has a very pretty, floral aroma infusing the defined citrus fruit. The palate is medium bodied and well balanced with a racy, gingery finish. A promising new wine in this stellar line up.


Chablis 'Les Clos' Grand Cru 2015 $75

The .75 acres in the 'Les Clos' vineyard is the Duplessis' only Grand Cru holding.Their parcel lies right in the middle of the slope, and these vines are absolutely their most prized possession. In true Grand Cru form, the wine is ripe, with complex aromas of citrus oil and citrus blossom, with a mineral/saline core of flint, sea shell, chalk, framed by light, spicy vanilla/oak notes. It is an incredibly compelling wine now, but will certainly reward patience in 10 years.
