Agostino Pavia is a Barbera specialist and he wants everyone to know the greatness of Barbera d’Asti. Unlike many Piedmont producers where Nebbiolo is the focus, here Barbera is king. Convinced of the quality of Barbera in this region, Agostino began purchasing top vineyards in the 1950s. He employs a sustainable farming philosophy he refers to as “buon senso” (common sense). He walks the vineyards during harvest, tasting the grapes, and deciding when to pick. All vineyard work is done manually, with integrated pest management, and cover crops between rows. A rigorous green harvest, combined with ideal exposure in the vineyards, allows Pavia to produce Barberas of uncommon complexity and precision. The wine has the luscious fruit to match the acidity. Aged in large slovenian barrels. |
