Domaine Coudray-Bizot was acquired during the Second World War by Dr. Denis Bizot, a surgeon at the Hospice de Beaune. It comprises a grand private house built during the reign of Louis XIV and is situated a short distance from the Hospices de Beaune. The vineyards are now managed and their wines produced and matured under the direction of Jean-Jacques Coudray. Jean-Jacques maintains a wine-growing and winemaking philosophy that respects traditions while combining modern precision and respect for nature. The grapes are all hand harvested and sorted, and fully destemmed before being gently pressed. Fermentation takes place naturally in open top wooden tanks without external yeast, without enzymes or sulfur. The red wines are neither filtered nor clarified, with an appropriate proportion of new barrels for each appellation and vintage, (never more than 30%) in order to respect the terroir. All the wines are aged on the fine lees 10 months for the Puligny, 18-20 months for the reds. Regular lees stirring gives roundness to both the Reds and the White and liberates the essential aromas and goodness. Another essential part of Jean-Jacques' philosophy is that he will not release wines until he feels they are truly mature.
