It's very tempting to imagine when you see a busy coffee shop, the owner is making a fortune, especially if you have never owned a coffee shop yourself!

But what if that snaking queue you witnessed was due to painfully slow service and not pent-up demand? What if it always seems full when you walk past because of too many large tables filled by just one person?
