This is a robust, flavorful dip ideal for game day parties!
It has a nice bacon flavor, spiciness, and a bit of tang.
This has a rich smoothness that makes it more elegant
than the typical Rotel cheese dip. This is so good,
I've been just sticking a spoon in and eating it straight.
The main way I serve this is in a crockpot warm so you
can just dip tortilla chips in. It's great this way.
At room temperature it becomes semi-solid. This would
be ideal as a spread on crackers or a sourdough or
French baquette. I would also serve it on hamburgers.
I'm also tempted to try adding about 1 cup milk for
each 2 cups dip, heat it up, and serve it as a bacon
chile cheese soup.
All in all, this is very easy, guaranteed to please,
and perfect for parties.
Bacon Chile Queso
Ingredients:
2 lbs Velveeta Cheese (or similar)
2 10-oz cans Rotel diced tomatoes & chiles
1 cup sour cream
1 tsp horseradish sauce
1/2 lb bacon
1/2 cup diced green chiles
Preparation:
1. Cut Velveeta into about 1 inch cubes and
place in crockpot with 2 cans Rotel tomatoes & chiles.
Turn crockpot on high. Stir at least every 10 minutes
for the next hour to blend.
To speed up this process, melt the cheese and tomatoes
together in a saucepan over medium high heat, stirring
frequently, for 10 to 15 minutes. Then transfer to crockpot.
2. Meanwhile, cook bacon in frying pan until crisp or
semi-crisp. Place on paper towels to drain.
3. Stir in horseradish sauce and green chiles, stirring
to blend well. Then crumble bacon and stir into the mixture.
4. Set the crockpot to warm, and serve in crockpot
with a giant bowl of tortilla chips.
Preparation time: about 1 hour 15 minutes
Serves: a party of 20 or so
