TRY IT AT HOME: FRESH POTATO GNOCCHI RECIPE


Ready to bring the flavors of Italy to your home? If you're looking to try an authentic Italian recipe that's simple, comforting, and full of flavor, homemade potato gnocchi is a must. This recipe uses just four ingredients to make light, pillowy gnocchi, which are then tossed in a savory tomato sauce.

Ingredients:

For the Gnocchi:

  • 1 pound potatoes (Yukon Gold or Russet)

  • 1 cup all-purpose flour

  • ½ teaspoon salt

  • 1 medium egg (room temperature)



For the Sauce:

  • 2 tablespoons olive oil

  • ½ teaspoon salt

  • 1-2 cloves garlic, chopped

  • 1 teaspoon oregano

  • 5 leaves basil (or 1 teaspoon dried)

  • 1 can pelati tomatoes (about 400 grams, with no added seasoning)

  • ½ cup water

Instructions:

  1. Prepare the Gnocchi:

    • Begin by boiling the unpeeled potatoes in a large pot until they are tender. Once cooked, let them cool just enough to handle. Peel them and then pass them through a potato ricer (or mash them if you don’t have one).
