Hello Friend, Coach Eddie here with another healthy recipe I know you'll enjoy. Since the weather outside might be getting a little chilly, this healthy turkey and veggie stew is hearty enough to keep you warm, full and satisfied Friend.

There's nothing better than a warm bowl of comforting stew especially when it has nutritious ingredients like veggies and lean ground turkey.  I hope you give this a try and like always send us a note back to let us know what you thought of it. I'd loved to here your comments.

Turkey and Veggie Stew

SERVES 8
INGREDIENTS:
2 teaspoons olive oil
2 cloves Garlic
1 bunch carrots, chopped
1 bunch celery
1.3 pounds Lean Ground Turkey
4 cups broth (chicken, beef or veggie)
1 (14.5 oz) can stewed tomatoes
4 ears of corn, kernels sliced off cob
3 tablespoons tomato paste
2 teaspoons dried basil
Dash of salt and freshly ground pepper


DIRECTIONS:
1.  In a large skillet heat the olive oil. Add garlic.
2.  Add chopped carrots, cover for 5 minutes.
3.  Add onions, celery and fennel. Saute until soft.
4.  In another skillet cook the ground turkey over medium heat until fully cooked, stirring often. Drain off excess fat.
5.  Transfer the veggies to large soup pot and add the remaining ingredients, and the cooked turkey. Cover and cook over low heat for 40 minutes. Add extra water as desired.
